Enjoy the sunshine, get the grill out and let’s start grilling! Three ideas using (4 chicken breasts) GRILLED CHICKEN BREASTS!
Lime Dill Sauce
4 chicken breast halves, deboned and skinned
1/4 cup lime juice (may also use lemon)
1/4 tsp salt
1/8 tsp pepper
1/2 tsp dried dill weed
1/2 tsp dried minced onion
2 T. Melted butter
Combine all marinade ingredients in heavy zip-lock plastic bag. Mix. Add chicken breasts; seal bag. Turn to coat chicken with marinade; let stand at room temp for 10-15 minutes. Meanwhile, preheat charcoal grill. Place chicken breasts over medium coals or low setting on gas grill. Cover grill; grill for 5 minutes on each side. Baste with butter after turning.
Etc. — Basil grilled chicken - stir chopped basil (1/4 cup) into 1/3 cup melted butter; Brush chicken lightly with this mixture; in small bowl, combine softened butter (1/2 cup) and additional 2 T. Minced basil; 1 T. Parmesan cheese, 1/4 tsp garlic powder, S&P. Beat this mixture at low speed with an electric mixer until smooth. Transfer to small serving bowl; set aside. Grill chicken over medium coals for 8 - 10 minutes on each side. Basting frequently with remaining melted butter mixture. Serve grilled chicken with basil-butter mixture.
Barbecue grilled chicken: Mix 1 cup Worcestershire sauce, ½ stick butter; juice of 2 lemons; mix all together and simmer for 10 minutes.
For good charcoal grilling, brush sauce over the meat during the last 20 or 15 minutes of grilling time. Turn often to prevent burning.
