With Easter coming around the corner, here is a creative way, using a secret ingredient (mashed potatoes) in order to make our Easter Egg Candies. By the way, since the children are not in school, have them help to make these candies with you!

Mashed Potato Easter Egg Candies

2 medium white potatoes 1/2 cup butter, sliced 2 - 16 ounces boxes of powdered sugar 1 ½ tsp pure vanilla extract 1/2 pound bittersweet chocolate bars

Preparation: Boil potatoes in small amount of salted water until soft. Drain and mash; measure out ½ cup into a bowl. Add butter to potatoes. Blend well and allow mixture to cool. Add confectioners sugar and vanilla to cooled potatoes (if your sugar is lumpy, you may want to sift it).

Knead mixture by hand until smooth. Mold mixture into the shape and size of eggs. Repeat process until entire mixture has been molded. Refrigerate the eggs for 1 hour until hardened.

Meanwhile melt chocolate in double boiler. Cool slightly, then, using a slotted spoon, dip eggs into the chocolate, coating entire egg. Place on rack or baking sheet to drain, then transfer to waxed paper to harden in refrigerator.

Etc.— You can add any of the following to the mixture before molding, chilling and dipping into chocolate. (Chocolate - sift l/4 cup cocoa with powdered sugar then add to mashed potato mixture and mix in); (Nuts add ½ cup chopped nuts as you knead); (Coconut - add ½ c, flaked coconut as you knead); (Peanut butter - add chunky or creamy PB to suit your taste as you knead). Place on a bed of coconut mixed with green food coloring to resemble grass.
