Bendix Woods Maple Muffins
2 cups flour
3 tsp baking powder
1/2 tsp salt
2 Tbsp sugar
1/4 cup butter, softened
3/4 cup maple syrup
1/4 cup milk
Stir together dry ingredients. Add butter and blend well. Add egg, syrup and milk. Stir until well-blended (do not over-beat). Fill greased muffin tins ½ full. Bake at 400 degrees for 20-25 minutes. Makes one dozen muffins.
Etc. — We are so fortunate in the New Carlisle area to have Bendix Woods. In its 195-acre park, maple trees are abundant. The sap from the trees to produce the maple syrup is the oldest agricultural enterprise in the U.S.
Sugar Camp Days, where you and your family could enjoy numerous activities such as visiting the Sugar House, having a pancake breakfast and enjoying a horse drawn wagon ride, just a name a few, was originally scheduled for this weekend. However, this traditional event has been canceled. In the meantime, you can purchase the maple syrup at the Nature Center at Bendix Woods.
