With the Lenten season upon us, I wanted to share with you this crisp, golden fish recipe using the secret ingredient (honey), which gives the coating a deliciously different twist. Can be used with any choice of fillet of fish you choose, and it is so easy to prepare!

 

Honey-Fried Fish
2 large eggs
1-2 tsp honey (to your own liking)
1 cup coarsely crushed saltines (about 22 crackers)
1/3 cup all- purpose flour
1/4 tsp salt
1/4 tsp pepper
4-6 fish fillets
Canola oil
Additional honey

 

In a shallow bowl, beat eggs and honey. In another bowl, combine cracker crumbs, flour, salt and pepper. Dip fish fillets into the egg mixture, then coat with crumb mixture.


In a large skillet, heat 1/4 inch of oil; fry fish over medium-high heat for 3-4 minutes on each side or until fish just begins to flake easily with a fork.


Drizzle with honey.

 

Etc. — I literally ran out of saltines for the crumb mixture, so I finely crushed pretzels and mixed with my saltines. Made an interesting mixture for the fish. Also, you can add any herb you wish to the crumb mixture - I like parsley. Hint: to test if your oil is ready for your fillets - the easiest and safest method is to stick the end of a wooden spoon into the oil. If you see many bubbles form around the wood, and they start to float up, your oil is ready for frying. If it is bubbling hard, the oil is too hot!
