There is a slight chill in the air, so how about something warm and comforting like a bowl of soup? Here is a recipe where you can use up your veggies!
Corny Chicken Soup 1 onion chopped Small bag of carrots, diced 2 T. butter or more 5 1/4 cups chicken broth 4 large potatoes, peeled and diced 3 cans cream style corn 9 oz bag of spinach, squeezed and dried 2 cups of shredded chicken ½ tsp pepper
Sauté onion and carrots with butter until carrots are tender (5-6 minutes). Add potatoes and chicken broth - bring to a boil and cook 12 - 15 minutes until potatoes are cooked through. Add remaining ingredients and cook until well blended.
Etc. – This is a great way of using up your leftover chicken. It is not only comforting, but quite tasty. The cream style corn adds wonders to this soup!
