Last year there was a “Celebration of Life” for a gentleman who passed away. I believe he and his wife were married at Bendix Woods (Glenn Bauer Shelter) and had relocated to Las Vegas, NV, which is the reason why they had the party in his honor at Bendix Woods. One of the highlights was a special cake made by his sister-in-law.

Vermont Maple Cake 2 ¼ c. flour 3/4 c. sugar 3/4 c. brown sugar 1 ½ tsp soda 3/4 tsp salt

Combine above, then add: 3/4 cup melted butter 1 ½ c. buttermilk 9 T. maple syrup 3/4 tsp vanilla 1 ½ tsp maple flavor

Mix just until combined, stir in 1 cup finely chopped pecans. Bake in 350 degree oven for 20-25 minutes in greased three 9-inch pans.

Frosting: 3 small packages softened cream cheese 9 T. softened butter 4 T. maple syrup 1 ½ tsp maple flavoring 3 c. powdered sugar

Spread on cooled cake and store in refrigerator.

Etc. — This cake is very dense and does not rise as a normal cake would. So, I used only two 9-inch cake pans (greased), but the family had suggested three layers which makes this cake look spectacular! When I made this cake, I used Bendix Woods Maple Syrup! This syrup can be found at Bendix Woods Nature Center as long as it is available. Cost is $10.00 for a pint and $6.00 for one-half pint. Before you venture out to buy, perhaps call the Nature Center at 654-3155 to make sure it is still available. By the way, enjoy Bendix Woods this season. It is not only colorful, but a fun place to visit and offers many family oriented activities. We are so very lucky to have such a wonderful park in our midst.
