The NFL playoff season is set and one of the teams vying to win the Super Bowl LIII is none other than the Chicago Bears.
Today’s recipe comes from “Jimbo” Covert - a former Chicago Bears offensive tackle who was a two-time pro bowl and first team all-pro selection during his eight year career with the Bears.
He was the 6th pick in the 1983 draft and was a first team All American with the Pittsburgh Panthers in 1982.
“Jimbo’s” Texas Toast Prepare ingredients as though you were making regular French toast; Best to use thick-sliced bread; suggested ingredients:
6 thick slices bread 3 eggs 1 c. milk 2 T. sugar 1/4 tsp cinnamon 1 tsp vanilla extract Salt to taste crushed corn flakes
Mix eggs, milk, sugar, cinnamon, extract and salt together - Place 4 T. butter in frypan or griddle over medium high heat.
Dunk each slice of bread in egg mixture - soaking both sides well, place in crushed corn flakes and cook. Top with powdered sugar. Serve.
Add berries or maple syrup to taste!
