With Easter almost upon us, I found an adorable appetizer for your Easter brunch.
Easter Potato Nests (Makes 4 nests)
Mix: 2 cups hash browns thawed S&P parsley green onions
Mix above mixture and place l/2 cup in muffin pans that have been sprayed with Olive oil. Use a pastry brush to be sure that the entire muffin pan has been sprayed. Press down and over sides to symbolize the “nest.” If you have a small container, press the hash browns down in the muffin pan.
After you have placed the hash brown mixture in the muffin pan, spray a little of the oil over the top. Place in hot oven 400 degrees for 25 minutes until golden brown. (You can also use parchment paper cups)
While “nests” are baking, in a separate small fry pan saute 2 T of onion, meat either 2 slices of cut up ham, or a few cut up sausages or a few slices of bacon, along with a few slices of red pepper. Set aside.
Whisk together: 2 eggs along with 2 T. cream, S&P and l/4 cup cheddar cheese. Add meat mixture to egg mixture.
Take baked “nests” out of the oven. Rest for 10 minutes or so. Use a small spatula and take “nests” out of the muffin pan carefully and place on a foil lined small baking sheet. Pour egg mixture into the “nests” and bake at 350 degree oven for 20 minutes. Sprinkle with chopped chives and serve.
Etc. — This recipe makes four little “nests” - if you wish to make more, you need to add ingredients to do so. Also, on Easter Sunday, you can add colored pipe cleaners (after baking) to symbolize an Easter basket ! Add whatever other ingredients you wish to add to the egg mixture.
