The parishioners of St. Stanislaus Kostka Catholic Church in New Carlisle, Indiana, have come up with a beautiful cookbook entitled, “Recipes and Remembrances.”
It is filled with absolutely wonderful, and may I say different recipes, for all to enjoy. Pastor Paul McCarthy has submitted this recipe (in memory of his mother) which was his mother’s and his family’s favorite.
Frieda’s Kieflies 1 cup confectioners’ sugar 1 (8 oz) cream cheese 1 c. cut soft shortening (part butter) 2 cups sifted flour
Mix cream cheese and shortening together with a fork. Add flour and mix well with hands. Chill dough for several hours or overnight. Roll out dough 1/8” thick on cloth covered board which has been sprinkled generously with confectioner’s sugar (dough will absorb). Cut into strips 1” x 3”. Place walnut or filling (brown sugar & raisins), cherries, poppy seed paste, fruit preserves, pie filling, etc.) Roll up. Place folded side down on cookie sheet. Bake at 375 degrees for 15 minutes. Remove from oven and sprinkle with confectioner’s sugar.
Etc. — Father Paul said that this was his mom’s own recipe that she created for kieflies, and he added, “they are delicious!”
