Sweeten up Memorial Day activities with this patriotic dessert - to celebrate the USA!
Red, White & Blueberry Memorial Cake 1 white cake mix Strawberry syrup: 1 cup fresh strawberries ⅔ cup sugar ¼ cup water 2 ¼ tsp strawberry gelatin
Blueberry syrup: ¾ cup fresh blueberries ½ cup water 4 ½ tsp sugar 4 ½ tsp berry blue gelatin
Preheat oven to 350 degrees. Grease two 9 inch round baking pans; In large mixing bowl, combine cake mix with ingredients on cake mix box (substituting water for milk).
Follow cake directions and transfer to prepared pans.
Bake according to directions on cake mix; cool completely.
Strawberry mix: In small saucepan, combine strawberries, sugar and water, bring to a boil.
Reduce heat, simmer uncovered 2-3 minutes or until berries are soft. Strain into a small bowl, pressing berries lightly; discard pulp.
Add strawberry gelatin to syrup, stirring to dissolve completely. Cool to room temperature.
Repeat above steps for blueberry gelatin - following blueberry syrup ingredients.
Using a wooden skewer, pierce top of cakes to within 1 inch of edge; Gradually pour cooled strawberry mixture over one layer of cake.
Repeat blueberry mixture with remaining cake layer. Refrigerate covered overnight.
In a large bowl, beat 2 ½ cups whipped cream - adding ⅓ cup confectioner’s sugar to whipped cream.
Top blueberry layer with whipped cream; top with strawberry layer; frost top and sides with remaining whipped cream.
