RITZY BAKED CHICKEN 1 lb chicken tenderloins 2 eggs 1 T. heavy cream 1 package Italian dressing mix 3/4 cup Parmesan cheese 2 sleeves Ritz crackers
Preheat oven to 350 degrees F. Spray cookie sheet with cooking spray and set aside. In a large zip top bag, crush crackers with Parmesan and dressing mix. In a large bowl, mix eggs with heavy cream. Add all chicken pieces and toss to coat. Shake chicken pieces in the bag of crackers, lay each out on baking sheet.
Bake in the oven for 20-25 minutes, until chicken is cooked through and golden.
Etc. — Dip this chicken in honey mustard dressing or dipping sauce for an amazing flavor. I made this recipe with chicken drumsticks - you may have to bake a bit longer - probably 30-35 minutes.
A quick recipe for homemade Honey Mustard Dipping Sauce is: 1/2 cup mayo 2 T. prepared yellow mustard 1 T. Dijon mustard 2 T. honey 1/2 T. lemon juice
Mix mayo, yellow mustard, Dijon mustard, honey and lemon juice together in a bowl. Cover and chill in refrigerator overnight.
