In commemoration of the NCAA Basketball Tournament, we are sharing with you Hoops Star Shaquille O’Neal’s great-grandma’s rich macaroni and cheese.
Shaq’s Macaroni and Cheese 1 (16 oz) elbow macaroni 1 tsp vegetable oil ½ tsp salt 1 stick (1 ½ cup) margarine 1 egg 1 T. flour or more 1 ½ cup milk 1 (16 oz) package Velveeta cheese, diced 1 (16 oz) package sharp cheddar cheese, diced 1 cup bread crumbs mixed with melted margarine
Preheat oven to 425 degrees. Boil water with salt and vegetable oil for preparing elbow macaroni ala dente’. Drain. In a large pan, melt margarine over low heat. Add flour. Cook stirring for 1 minute. Add 1 1/2 cup milk and egg. Cook and stir for 1 minute. Stir in Velveeta cheese and half of the cheddar. Cook on low heat until cheese is melted and sauce is smooth. Add cooked macaroni to sauce. Stir over low heat for 1 minute. Taste and add extra salt, if necessary. (If sauce seems to be too thick, add milk to your choosing.) Pour mixture into a large greased casserole dish. Top with remaining cheddar and prepared bread crumbs. Bake for 30 minutes or until top and bottom are browned. Cool slightly, and enjoy those games!
Etc. — Shaquille says this is his favorite mac and cheese. He says he was never much of a cook, but then he didn’t have to be because he has four sisters and a great mom-cook. He said now that he is older, he has to discipline himself with chicken and fish, but there is his favorite that he has once in a while and you know what it is - Shaq’s Mac and Cheese!
