The next two issues of Recipes, Etc. will be devoted to Thanksgiving Time Savers for you.

1. No Roll Pie Crust - Throw away that rolling pin for this “easy-as-pie” crust. 1 ½ cups all purpose flour 2 tsp sugar 1 tsp salt l/2 cup vegetable oil (like mazola) 2 T. cold milk In a pie plate, mix flour, sugar and salt. Whisk together oil and milk in a 1 cup measuring cup. Make a well in the center of the flour and add the milk/oil mixture. Mix with a fork until it makes a ball. Flatten and press into the pie pan, shape and flute the edge. Bake at 375 degrees for 10-12 minutes until golden. One crust pie shell; excellent for cream pies and crumb topped baked pies.

2. Quick Roasted Veggies - Cook your turkey together with your veggie sides all at once by just alternating cooking times in the oven! (Check your time for the turkey when calculating your oven times for your vegetables.) Prepare your vegetables, such as potatoes, small carrots and green beans or others to your liking; Toss with olive oil, season with salt and pepper and chopped fresh herbs (such as oregano, thyme, parlsey, dill, rosemary). Roast them by group on a rimmed baking sheet in a 350 degree oven along with your turkey; Take out of oven and keep warm when they are done. Reheat while the turkey is roasting. Roasting the vegetables at longer, lower temps will draw out the sweetness of the vegetables The following is a time element you can go by for the roasting time for your vegetables: Potatoes - scrub them and cut into 1 ½ inch chunks - time: 1 ½ hours Small carrots - trimmed, peeled, whole - 1/1/2 hours Green Beans - Trimmed, whole - 45 minutes.

3. Homemade Cranberry Sauce - Easy as opening a can of cranberry sauce; even better, it’s yours! In 2 qt saucepan, heat 1 bag (12 oz) cranberries, ½ c. sugar and 1/4 c. water to boiling on high, stirring occasionally. (you can swap juice or vinegar for the water) Reduce the heat and simmer 5 - 10 minutes or until the cranberries pop and sauce thickens. Transfer to container and refrigerate until chilled. (Can be made three days prior to serving) How simple! Etc. — Even for an experienced cook, putting a traditional Thanksgiving dinner on the table is a culinary challenge. The dinner is often a timing nightmare! Make dishes ahead or prepare their ingredients a day or two before. By all means, have time for yourself to enjoy family and friends!
