What is great about summer is that you can go into the grocery store and find freshly picked fruit and berries; strawberries, raspberries, blueberries, peaches, etc.   
Here is a recipe that is versatile. You can use any berry or fruit you desire.   

 

Fruit Pie Delite

Crust:
3/4 cup all -purpose flour
1/2 cup quick-cooking oats
1/2 cup chopped pecans
2 T. sugar
1/8 tsp salt
1/2 cup butter

Fruit Layer:
3/4 cup sugar
2 T. cornstarch
1 cup water
2 T. light corn syrup
2 T. flavored gelatin
1 quart fresh fruit 

Filling:
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 tsp vanilla extract
l/2 cup heavy whipping cream, whipped
Butter the bottom and sides of a 9 inch pie plate.  In a bowl combine the flour, oats, pecans, sugar and salt.  Stir in the butter until blended.    Press onto bottom and up the sides of a 9 inch pie plate.  Bake at 400 degrees for 12-15 minutes or until lightly browned.  Cool on wire rack.
Meanwhile, combine sugar and cornstarch in a saucepan.  Gradually, add the water and corn syrup; bring to a boil over medium heat; stir in gelatin until dissolved.  Cool to room temperature.  
Arrange the berries or fruit on the cooled crust.  Carefully pour the gelatin mixture over the fruit.  Refrigerate for at least 2 hours until set. 
In a mixing bowl, beat cream cheese, sugar and extract until fluffy.  Fold in whipped cream. Carefully spread over fruit layer.  Cover and refrigerate for at least 2 hours or overnight.  

Etc. — The gelatin will coincide with your choice of fruit. Also you may use vanilla or almond extract.   Be creative with this recipe.
